- Place dry ingredients in a large mixing bowl.
- In a separate bowl, mix all of the wet ingredients together.
- 2 cup soy milk, 1⁄3 cup vegetable oil, 2tsp apple cider vinegar.
- Fill prepared cupcake mould 3⁄4‘s full and bake for 15-20 min in a pre-heated oven @ 180°C
- Cool and enjoy with Mary-Ann’s pre-made, frozen Cashew Icing.
