Curried Veg and brown rice
- 2 kg mixed vegetables
- Leeks or onions – dry stir fry then add
- 4-6 tsp medium curry powder
- 1 tsp coriander
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp cinnamon
- Cook with a little water then add the rest of vegetables with 1-2 cup of water
- Simmer gently until ready
Optional add 2 cups tomato puree
Serve with Mary-Ann’s Brown Rice
